How to roast Yukon gold potatoes in the oven
Cut the potatoes in half and boil.
Mix the cooked potatoes with olive oil and spices.
Transfer to a baking sheet and drizzle with salt and fresh ground pepper.
Bake for 35 min and serve!
- STEP 1 :
Preheat the oven: Start by preheating your oven to 425°F (220°C). This high temperature will help to achieve a crispy and golden-brown exterior while keeping the inside tender.
- STEP 2 :
Prepare the potatoes: Wash the Yukon Gold potatoes thoroughly under cold water to remove any dirt or debris. Since the skin of these potatoes is thin and tender, there's no need to peel them. However, if you prefer peeled potatoes, feel free to do so.
- STEP 3 :
Cut the potatoes: Cut the potatoes into uniform bite-sized pieces, about 1 inch in diameter. Keeping the pieces consistent in size will ensure even cooking.
- STEP 4 :
Season the potatoes: In a large bowl, combine the olive oil, garlic powder, paprika, dried thyme, dried rosemary, salt, and pepper. Mix well to create a flavorful seasoning. Add the cut potatoes to the bowl and toss gently until each piece is evenly coated with the seasoning.
- STEP 5 :
Arrange on a baking sheet: Take a large baking sheet and line it with parchment paper or lightly grease it to prevent sticking. Arrange the seasoned potato pieces in a single layer on the baking sheet, making sure they are not overcrowded. Leaving some space between the pieces will promote even browning.
- STEP 6 :
Roast in the oven: Place the baking sheet with the potatoes in the preheated oven on the middle rack. Allow them to roast for about 25-30 minutes, or until the potatoes are crispy and golden brown on the outside. Remember to flip the potatoes halfway through the cooking time to ensure even browning.
- STEP 7 :
Garnish and serve: Once the potatoes are roasted to perfection, remove them from the oven and transfer them to a serving dish. For an extra touch, sprinkle some fresh chopped parsley on top as a garnish. Serve immediately as a side dish alongside your favorite main course.

Expert Tips
- Be generous with olive oil. To coat the potatoes, garlic, and spices, 3 full tablespoons of oil are required. Additionally, it helps them brown by preventing them from burning.
- Implement parchment paper. This guarantees that nothing is going to stick to the pan.
- Cook till golden. Continue baking for an additional 5 minutes if they haven't browned after 35 minutes.
- For an added depth of flavor, you can experiment with different herbs and spices such as thyme, rosemary, or even cayenne pepper.
- To achieve a crispier texture, consider increasing the oven temperature slightly, but keep a close eye on the potatoes to prevent burning.
- If you prefer a softer interior, you can reduce the oven temperature and increase the cooking time accordingly.
- Ensure that the potatoes are evenly coated with the seasoning mixture to achieve a well-balanced flavor in every bite.
- If you want to make a larger batch, make sure to use multiple baking sheets and rotate them during the cooking process for even heat distribution.
Storage
- Storage: If you have leftovers or need to prepare the potatoes in advance, it's important to store them properly to maintain their flavor and texture. Allow the roasted potatoes to cool completely before transferring them to an airtight container or a resealable plastic bag. Store them in the refrigerator for up to 3-4 days.
- Reheating: To reheat the roasted potatoes, there are a few methods you can choose from
- a. Oven: Preheat your oven to 350°F (175°C). Arrange the potatoes in a single layer on a baking sheet and heat them in the oven for about 10-15 minutes, or until they become heated through. This method helps to retain the crispiness of the exterior.
- b. Skillet: Heat a skillet or frying pan over medium heat and add a small amount of oil or butter. Add the roasted potatoes to the skillet and stir occasionally, cooking them for 5-7 minutes until they heat evenly.
- c. Microwave: This method is the quickest but may result in slightly softer potatoes. Place the roasted potatoes in a microwave-safe dish and cover them with a microwave-safe lid or microwave-safe plastic wrap. Heat them in the microwave on high in 30-second intervals, stirring in between, until they are heated thoroughly.
- Serve: Once the roasted potatoes are reheated, serve them immediately. You can garnish them with fresh herbs or toppings of your choice for added flavor and presentation.
Note: While reheating, the potatoes may not regain their original crispiness, but it can restore some of the flavors and textures. Nevertheless, they will still be delicious and enjoyable.
It's worth mentioning that potatoes have a tendency to absorb moisture, so it's important to store them in an airtight container to prevent them from becoming mushy. Additionally, it's recommended to consume the reheated potatoes within a day or two for the best taste and quality.
Top tip
Parboiling: By accelerating the roasting procedure, this step prevents the garlic from burning. Additionally, it keeps the surface crisp and the inside incredibly fluffy. I do not advise omitting it.

NOTES
- I don't recommend using aluminum foil on top of the potatoes, as it does not gonna give you that crispiness on top.
- It's simple to add some roasted baby carrots to this recipe. They can all be placed on the same pan, although carrots will cook more quickly.
- Why don't the potatoes brown? Try raising the heat in your oven to 450F, but keep an eye on it.
- When you flip the potatoes over the first time, they might not be browned. They should brown when turned over during the final 15 minutes of cooking if your oven is functioning properly.
