In an airtight container, store leftover roast potatoes in the refrigerator for no more than three days.

Freezing - If you wish to retain leftover roast potatoes for a longer period of time, you can also freeze them: The remaining roast potatoes should be spread out on a baking sheet and frozen in the freezer. For protection, it is recommended that the frozen roast potatoes be placed in freezer bags. This will allow the potatoes to freeze quickly, which helps to minimize the formation of ice crystals. This prevents the potatoes from becoming mushy when they are thawed and helps to lock in flavor and texture.
Reheating - To reheat frozen roast potatoes, you can air fry them:
Put the air fryer's frozen roast potatoes in there. Put your potatoes in the air fryer for 15-20 minutes at 360°F/180°C until they're done. Shake the basket approximately every 5 minutes to distribute the frozen potatoes and guarantee even air-frying.

INGREDIENTS
- 1 lb whole baby potatoes
- 3 tbsps extra virgin olive oil
- ½ tablespoon smoked paprika
- 1 teaspoon garlic powder
- ¼ cup fresh chopped parsley
- salt and pepper to taste
INSTRUCTIONS
- Cleanly scrub the potatoes under running cold water, then drain and pat them dry with a kitchen towel.
- In a medium bowl mix the potatoes and the olive oil alongside the spices.
- Shake the basket of the air fryer after adding the seasoned baby potatoes to ensure that they are arranged in a single layer.
- Shaking the basket halfway through, air fried the tiny potatoes for 12–15 minutes at 200°C/400°F, until fork tender and crispy on the outside.
- Serve the potatoes right away after removing them from the air fryer basket. Enjoy!
