Ingredients and Substitutions
This Taco Bell-inspired quesadilla sauce recipe requires only a few ingredients. The full proportions are listed on the printable recipe card below.
- Full-fat sour cream provides the greatest flavor and texture. Low-fat will work, but it will be less flavorful and not as smooth and creamy.
- Mayonnaise: Mayonnaise provides fat to the sauce, counteracting the acid and spice from the pickled jalapenos. Again, you can use low-fat mayo, but full-fat mayo has the best flavor and texture.
- Pickled Jalapenos & Juice: The pickled jalapenos steal the show here. I don't advocate using fresh jalapenos because they ruin the overall flavor of the sauce. If you don't like heat, search for mild or tamed pickled jalapenos. You'll be using the juice, so look for pickled jalapenos in a glass jar rather than sliced jalapenos in a small can.
- This sauce's spice blend consists of chili powder, onion powder, garlic powder, cumin, paprika, and cayenne pepper. You can modify these spices to suit your unique taste.
- Granulated Sugar: Sugar balances the heat and acid, and a little goes a long way.
Instructions
- Put the ingredients plus a few pinches of salt and pepper in a food processor.
- Process till creamy and smooth.
- Serve with your preferred cheese quesadilla and season with salt & pepper to taste!
Tips for Making the Best Creamy Jalapeno Sauce
- Don't worry if you don't have a food processor! The food processor just chops the jalapeño finely and blends all the ingredients into a smooth sauce. Another option is to chop the pickled jalapeños yourself and combine all the ingredients in a medium bowl.
- To ensure that everything is well mixed, scrape down the sides of the food processor as necessary. To ensure that everything is thoroughly combined, pause the food processor a couple of times and scrape down the sides.
- Make your own version of Taco Bell's quesadilla sauce to use as a dip, spread, or side dish. For a quick lunch, I like to make this sauce in advance and store it in the refrigerator so I can use it as a delicious spread on a flatbread with spinach and crispy panko chicken. It also tastes great as a dipping sauce for air fryer tater tots or crispy baked fries, or over a juicy air-fried burger. For a simple taco salad, you could even use it as a tasty salad dressing with my ground beef taco meat and crispy tortilla strips.
- Feel free to prepare this sauce up to a week ahead of time and allow the flavors to meld in the refrigerator; it simply becomes better with time.
How to Make the Perfect Chicken Quesadilla
- A large saute pan or skillet should be heated to medium heat.
- Top a burrito-sized flour tortilla with diced grilled chicken, creamy quesadilla sauce, and shredded cheese (try Monterey Jack, Colby Jack, or a Mexican three-cheese blend).
- Cook for a few minutes on each side until golden brown, then fold in half.
- A portion of creamy quesadilla sauce is served for dipping.
Frequently Asked Questions
Taco Bell's chicken quesadillas are served with a jalapeño sauce that is created with mayo, sour cream, jalapenos, and a number of spices, such as paprika, cumin, chili powder, garlic powder, and onion powder.
There are many similarities between chipotle sauce and jalapeño sauce. The pepper makes the largest impact. Fully ripened red jalapeño peppers that have been smoked and dried to give them a somewhat distinct, smokier flavor are known as Chipotle peppers. Pickled jalapenos and their juice are essential to creamy jalapeño sauce. The peppers themselves are what distinguish the sauces, even though the other components—mayo, sour cream, and spices—are comparable.
This jalapeño sauce is very creamy! This sauce is a great accompaniment to a slightly crunchy flour tortilla topped with melted cheese and diced chicken. It is a delightful combination of chilled, creamy sour cream and mayo, with a hint of heat from smoky spices and pickled jalapenos. Try it with either a chicken or cheese quesadillas!
Make-Ahead, Storage, and Freezing
- Make-Ahead: The ideal make-ahead sauce to have on hand is creamy jalapeño sauce. To have enough on hand for any dipping or dressing requirements, make a double batch and store it in the refrigerator.
- Storage: Keep this sauce in the fridge for up to a week in an airtight container.
- Freezing: This sauce is freezer-friendly. Store it in the freezer for up to a month after placing it in a freezer-safe container. To recombine the sauce ingredients, thaw overnight in the refrigerator and be prepared to whisk or stir briskly. To have individual portions of the sauce ready to thaw whenever you need them, you can also freeze it in ice cube trays!
