Air Fryer Artichokes Recipe
Artichokes were a fairly common item on my family's supper table when I was growing up in California. I didn't realize that folks from different regions of the country didn't always eat artichokes until I was well into adulthood.
When my husband moved here from the east coast, he was introduced to artichokes along with my propensity for putting avocado on everything and my love of a green salad with homemade vinaigrette every night with dinner.

- Crispy Air Fryer Artichokes (Frozen or Fresh)
- 💬 Comments
Except for the few instances when my mother got fancy with a pancetta-studded bread stuffing, my family always ate artichokes steamed with either melted butter or mayonnaise for dipping. One of my favorite air fryer dishes is these artichokes.
🌟 Why You'll Love This Recipe
- Crispy Perfection: The air fryer achieves a delightful crispiness on the artichoke leaves, providing a satisfying crunch with every bite. This texture elevates the overall eating experience, making it incredibly enjoyable.
- Healthier Option: Unlike traditional frying methods that require a significant amount of oil, air frying uses minimal oil, promoting a healthier cooking option. The result is a guilt-free indulgence without compromising on flavor or texture.
- Efficiency and Speed: The air fryer significantly reduces cooking time compared to conventional methods. In just 20-25 minutes, you can have a plate of beautifully cooked and crispy artichokes, making it a convenient and time-saving option for busy individuals.
- Versatility in Seasoning: The seasoning mix used in this recipe, featuring olive oil, garlic, lemon juice, salt, pepper, and optional additions like Parmesan cheese and herbs, enhances the natural flavors of the artichokes. This versatility allows you to tailor the recipe to your taste preferences.
- Easy Preparation: The step-by-step preparation process outlined in the article ensures that even those new to cooking can successfully create this dish. From selecting fresh artichokes to applying the seasoning mix, the recipe is designed to be accessible and straightforward.
- Halving Option for Even Cooking: Halving the artichokes before air frying not only speeds up the cooking process but also ensures even cooking. This method allows the air to circulate more effectively, resulting in uniformly crispy leaves and a perfectly cooked heart.
🧾 Ingredients To make Air Fryer Artichokes
The list of ingredients doesn't get much simpler than this! For specific measurements, refer to the recipe card at the bottom of the article.
- Artichokes (4 medium-sized): Look for fresh, medium-sized artichokes with tightly closed leaves and a vibrant green color. The artichokes will serve as the base for this dish, offering a unique and earthy flavor.
- Olive Oil (2 tablespoons): Olive oil adds a rich and fruity flavor to the artichokes while helping to achieve a crispy texture during air frying. It serves as a healthier alternative to traditional frying oils.
- Garlic (2 cloves, minced): Minced garlic provides a savory and aromatic element to the dish, enhancing the overall flavor profile. It complements the natural taste of the artichokes and infuses them with a subtle garlic essence.
- Lemon Juice (2 tablespoons): Lemon juice brings a bright and citrusy zing to the recipe. Its acidity not only enhances the flavor of the artichokes but also helps prevent discoloration and adds a refreshing element.
- Salt and Pepper (to taste): These basic seasonings are essential for enhancing the overall taste of the artichokes. Salt brings out the natural flavors, while pepper adds a hint of warmth and complexity.
- Optional: Parmesan Cheese (¼ cup): Grated Parmesan cheese adds a savory and umami dimension to the dish. Its nutty and salty notes complement the artichokes, creating a more complex flavor profile.
👩🏻🍳 How to Cook Air Fryer Artichokes
These air fryer artichokes' recipe and cooking instructions are both quite straightforward. These artichokes go with any meal, a straightforward but effective statement!

- Make Seasoning Mix: Combine olive oil, minced garlic, lemon juice, salt, and pepper. Add Parmesan and herbs if desired.
- Coat Artichokes: Brush artichokes with the seasoning mix, ensuring even coverage.
- Preheat Air Fryer: Set the air fryer to 375°F (190°C).
- Air Fry: Place artichokes in the air fryer basket and cook for 20-25 minutes, flipping halfway through.
- Serve: Let the artichokes cool for a few minutes and then arrange on a plate. Serve with optional dipping sauces.
How Long To Cook Artichoke In The Air Fryer?
The cooking time for artichokes in the air fryer can vary depending on factors like the size of the artichokes and whether you've halved them or not. However, as a general guideline, you can follow these time ranges:
- Whole Artichokes: Cook at 375°F (190°C) for approximately 25 to 30 minutes. Flip the artichokes halfway through the cooking time to ensure even crispiness.
- Halved Artichokes: If you've halved the artichokes for quicker and more even cooking, the time can be reduced to around 20 to 25 minutes. Again, flip them halfway through for even results.
Always keep an eye on the artichokes as they cook, and adjust the time based on their size and your air fryer's specific characteristics. The goal is to achieve a golden-brown and crispy exterior while ensuring the inner leaves are tender. It's a good idea to check the doneness by testing the tenderness of the leaves with a fork or by taste-testing.
🥣 What To Serve With Air Fryer Artichoke
Air fryer artichokes are a versatile and flavorful dish that pairs well with various accompaniments. Here are some ideas for what to serve with air fryer artichokes:
- Dipping Sauces: Prepare a variety of dipping sauces for added flavor. Consider classic choices like garlic aioli, lemon-infused mayonnaise, or a balsamic reduction. These sauces enhance the artichokes' taste and provide a delightful dipping experience.
- Herb-Infused Yogurt: Mix chopped fresh herbs like dill, parsley, or chives into plain Greek yogurt. This light and refreshing dip complements the earthy flavor of the artichokes.
- Roasted Red Pepper Hummus: Hummus adds a creamy texture and a burst of flavor. Opt for a roasted red pepper hummus for a slightly sweet and smoky element that pairs well with the artichokes.
- Citrusy Quinoa Salad: A light and citrusy quinoa salad with ingredients like cherry tomatoes, cucumber, and feta cheese can be a refreshing side dish. The acidity and freshness of the salad balance the richness of the artichokes.
💭 Recipe Pro Tips
- Choose Fresh Artichokes: Select fresh, medium-sized artichokes with tightly closed leaves. The freshness of the artichokes contributes to better flavor and texture.
- Prevent Browning with Lemon Juice: Squeeze lemon juice over the artichokes after trimming to prevent them from turning brown. Lemon not only adds flavor but also helps maintain the vibrant green color.
- Halving for Even Cooking: Consider halving the artichokes to speed up the cooking process and ensure even cooking. Halved artichokes also allow the seasoning to penetrate more effectively.
- Customize Seasonings: Experiment with the seasoning mix. Add herbs like thyme or rosemary, or try different spice blends to customize the flavor according to your preferences.
- Use a Basting Brush: To ensure even coating, use a basting brush to apply the seasoned olive oil mixture. This helps distribute the flavors more uniformly across the artichokes.
- Preheat the Air Fryer: Preheat the air fryer before cooking to ensure the artichokes start cooking immediately. This contributes to a crispier exterior.
❄️ Storage and Freezer Instructions
Storing and freezing air-fried artichokes involves specific steps to maintain their flavor and texture. Here's a guide on how to store and freeze air-fried artichokes:
Storing Air-Fried Artichokes:
- Refrigeration:
- If you have leftover air-fried artichokes, store them in an airtight container in the refrigerator. Properly stored, they can last for up to 2-3 days.
- Avoid Moisture:
- Place a paper towel in the container to absorb any excess moisture, which can affect the crispiness of the artichokes.
- Reheating:
- To reheat, use an oven or toaster oven to help retain the crispiness. Avoid using a microwave, as it may make the artichokes soggy.
Freezing Air-Fried Artichokes:
- Cool Completely: Allow the air-fried artichokes to cool completely before freezing. This helps prevent condensation and ice crystals during freezing.
- Single-Layer Freezing: Place the cooled artichokes in a single layer on a baking sheet. This initial freezing in a single layer prevents them from sticking together.
- Freeze: Transfer the baking sheet to the freezer and let the artichokes freeze for about 1-2 hours.
- Transfer to Freezer Bags or Containers:
- Once individually frozen, transfer the artichokes to airtight freezer bags or containers. This method prevents freezer burn and maintains quality.
- Label and Date: Label the bags or containers with the date of freezing to help keep track of freshness. Use within 2-3 months for the best quality.
- Reheating from Frozen: When ready to use, you can reheat the frozen artichokes directly in the air fryer or oven without thawing. Cooking times may need to be extended slightly.
Are Artichoke Hearts Poisonous?
There is a section of the artichoke that you shouldn't eat even though it is not deadly or dangerous.
The fluffy, hairy, spiky portion in the middle of the artichoke known as the "choke" is so called because it can become lodged in your throat.
Before or just after cooking your artichokes, remove the choke and discard it. The remainder of the artichoke heart is excellent and edible.
It's better to avoid attempting to consume the artichoke's tough stem and outer leaves as well. Although they are not harmful, they are fibrous and woody and cannot be digested.
How do you eat artichokes?
Start by removing the outer leaves off a leaf, then dip the wide part of the leaf into your preferred sauce (our favorites are this Easy Garlic Dip or Blue Cheese Dip). A delicious alternative is alioli.
Pull the leaf through with your front teeth to get rid of the soft portion you coated in the sauce. Throw the rest away.
The artichoke heart, which is the most excellent component, will remain after all the leaves have been removed. We did not remove the fluff before cooking, therefore it will be present. Take a spoon, carefully slide it under the fluffy portion, and move it around until all of it is gone. Just grab the fluff with your fingers and pull it out.
How to Pick Out Artichokes
Learn how to choose a quality artichoke at the shop if you want to prepare artichokes in the air fryer successfully! Here are some pointers to assist you.
- The best-tasting artichokes will have deep green, tightly-packed leaves as their predominant color. It's okay if the tips of them are brown in spots. As they are cooked, that will enhance the flavor.
- Artichokes are in season from when? Artichokes are at their prime in the spring and fall, so those are the best times to buy them.
- Squeeze them a little! It's a touch too old if you press an artichoke and it feels squishy or spongy. A squeaky one is what you want.

📖 Recipe
Crispy Air Fryer Artichokes (Frozen or Fresh)
Equipment
- Air Fryer
INGREDIENTS
- 4 Fresh Artichokes
- 1 Lemon
- 2 tbsps olive oil
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- ½ teaspoon garlic powder optional
INSTRUCTIONS
- Prepare the Artichokes: Rinse the artichokes under cold water. Trim the top quarter and cut off thorny tips. Optionally, halve the artichokes for quicker cooking.
- Make the Seasoning Mix: In a bowl, combine 2 tablespoon olive oil, minced garlic, 2 tablespoon lemon juice, and salt and pepper to taste. Add optional ingredients like Parmesan and fresh herbs if desired.
- Coat the Artichokes: Brush the artichokes with the seasoning mix, ensuring the leaves are well-coated. If halved, make sure to coat the cut side as well.
- Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat.
- Arrange in the Air Fryer Basket: Place the seasoned artichokes in the air fryer basket in a single layer. Avoid overcrowding for even cooking.
- Air Fry: Cook for 20-25 minutes, flipping the artichokes halfway through. They should be golden brown and crispy.
- Serve Hot: Once done, carefully remove the artichokes from the air fryer. Let them cool for a few minutes and then arrange them on a plate.
NOTES
- The size and form of artichokes might vary. Due to this, they may require different amounts of seasoning and air-frying time. For medium ones, 12–15 minutes should be adequate. Cooking time must be increased if using large ones.
- I would choose 17 to 20 minutes, but I would monitor them. Because some of the salt will come off when cooking, I also prefer to season them liberally on both sides. Lemon juice should also be used liberally.
- Use only olive oil for the finest results (I used extra virgin olive oil).
- In this situation, more pepper is preferable to less. The artichokes do get a good flavor from it.
