- Pasta - I prefer longer shapes like linguini, but anything works. Penne would be excellent.

How to make creamy garlic pasta

- Bring the spaghetti to a boil. Melt the butter in a skillet in the meantime. Stir or whisk for a few minutes after adding the flour. Add the broth and garlic and stir until aromatic. Add the cream and whisk.
- Allow it to thicken by reducing. Season with salt and pepper, taste, and stir in the parmesan. After draining, stir the pasta. If preferred, garnish with more parm and fresh parsley.
Substitutions and variations
- I do not advise replacing the cream with a less fattening product. It might curdle, be thinner, and not have the desired texture and flavor.
- Although I prefer this pasta just the way it is, it's a perfect base to add cooked chicken or another protein, such as turkey.
- If you would like, you may even add some vegetables (try a handful of peas or mix in some spinach at the end).
What to serve with creamy garlic pasta

Leftovers and storage
- Although I prefer it fresh, you can keep leftover garlic spaghetti in the refrigerator for three to four days.
- Slowly reheat over low heat to avoid the sauce separating. If the sauce gets too dry, add a little cream.
- Freezing creamy sauces is not something I advise.

No, not if Parmesan cheese is used. Replace the Parmesan cheese with an Italian "Parmesan-style" hard cheese that is free of animal rennet to make it vegetarian; you can get these in most large supermarkets.
You can freeze it, yes. The spaghetti may lose some of its texture when frozen, as normal, but as long as you thaw it gradually before heating it rather than putting it in the microwave at full blast, it usually works fine.

Creamy Garlic Pasta
INGREDIENTS
- 8 ounces uncooked pasta I used spaghetti
- 1 tablespoon butter
- 1 teaspoon flour
- 3 cloves garlic minced
- ¼ cup chicken broth
- 1 cup heavy/whipping cream
- ½ cup freshly grated parmesan cheese
- Salt & pepper to taste
- Chopped fresh parsley optional to taste
INSTRUCTIONS
- For the pasta, bring a pot of salted water to a boil. Follow the directions on the package to cook it al dente.
- It's time to begin the sauce when the pasta is almost done. In a skillet over medium-high heat, melt the butter. Add the flour and cook, stirring often, for about 2 minutes.
- After adding the chicken stock and garlic, simmer for approximately one minute.
- Add the cream and boil for a few more minutes, stirring now and again, until the sauce has the consistency you want.
- Add the parmesan cheese and adjust the seasoning with salt and pepper.
- If you want to thin the sauce a touch, add a little pasta water. Drain the pasta and toss with the sauce until thoroughly coated. If preferred, garnish with additional parm and parsley and serve right away.
